Summer Thyme Simple Syrup
There’s a good reason this is called simple syrup. It really truly is simple to make! I’m a huge fan of savory-sweet flavors rather than sweet-sweet flavors, so this Thyme Simple Syrup was really a no brainer! I’ve also made this same recipe with rosemary before and WOWEE. I am in love. Just check out the recipe below!

Summer Thyme Simple Syrup
This sweet, thyme-y syrup is perfect for making mocktails (or regular cocktails) you'll want to sip on all summer long! Make the full batch to freeze in ice cube trays to add flavor to your drinks any time.

Ingredients
- 2 cups filtered water
- 2 cups white sugar
- 1 heaping handful of freshly washed thyme sprigs*
Instructions
- Add the water and sugar into a medium saucepan over medium high heat. Stir until sugar dissolves.
- Add in the thyme sprigs and bring it just to a boil, then reduce heat to medium.
- Simmer for 10 minutes, stirring regularly.
- Let syrup cool slightly and carefully remove thyme sprigs and set aside**
- Strain the syrup into a large glass jar or repurposed syrup bottle and store in the fridge for up to 2 weeks, then freeze the remainder in an ice cube tray.
- To serve, use 1-2 T to flavor 8oz of sparkling water. Add a fresh thyme sprig or one of the dried ones from this recipe as garnish!
Notes
*You can also make this simple syrup with rosemary or mint as well, though you may want to consider slightly reducing the amount of herb sprigs because those two herbs are a bit stronger than thyme.
**Try air drying the sugared thyme sprigs on a sheet of wax paper to use as garnish. Or if you're feeling adventurous, save them to use in a sweet & savory thyme shortbread!
