Po’s Favorite Breakfast Casserole

What started out as a way to kill time on those early Sunday mornings evolved into one of our favorite weekend breakfast traditions! Isn’t it funny how things work like that? But in any case, this recipe is a fun way for toddlers-kinders to get involved in the kitchen by pouring and mixing ingredients!

While Po and I don’t really follow an exact recipe, these are the amounts I typically eyeball for when we make it. So add an “about” in front of all the ingredients and you’ll be golden. Haha.

Po's Favorite Breakfast Casserole

This easy, delicious breakfast casserole is the perfect comfort food for a lazy weekend or a brunch party!

Ingredients

  • 6-8 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheese
  • 8-12 oz breakfast sausage, depending on how meaty you'd like your casserole to be (we like Trader Joe's Chicken Breakfast Sausage)
  • Homemade croutons, or store bought unflavored
  • Salt and pepper to taste, or other spices as desired*

Instructions

  1. Cook the sausage according to directions on the package. Set them aside to cool while you mix the other ingredients.
  2. Preheat oven to 350 and lightly grease a small casserole dish**. Break eggs into a large bowl. Stir in milk and shredded cheese. Slice cooled sausage into bite sized pieces (if necessary) and add to the egg mixture.
  3. Pour the mixture into the prepared casserole dish and evenly distribute the croutons on top. Gently pat them down with the back of a fork so they sink into the egg mixture a little bit.
  4. Bake at 350 for 30-35 minutes. Slide a plastic knife or thin silicone spatula around the edges to help it lift out when it cools. Let sit for 10-15 minutes to make sure the egg is fully cooked, slice, and enjoy!

Notes

*For optional spices, you could use garlic powder, onion powder, or even some Italian seasoning. If not making for kids (or if your kids are adventurous) 1/8 tsp cayenne would be amazing in this!


**Try to use a shallow pan (unlike I did in this photo- oops!) so the cooking time doesn't need to be extended. It works in a pinch with a loaf pan, but needed an extra 15 minutes cook time for me.
