Pumpkin Spice Chai Bread

Last week I made this bread in anticipation of the beginning of the very best season of all: fall. (Which is technically not until late September, but we don’t play by those rules here. According to me and the rest of Instagram, September 1st is the first day of fall.)

Anyway— I love homemade Chai and I love all things pumpkin, so naturally combining the two was the next evolution. If you’re also a fan of pumpkin & Chai, I think you’ll love this recipe! Give it a try and let me know what you think!

Ingredients

  • 1.5c all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/8 tsp fresh ground nutmeg
  • 1/2 tsp ground cardamom
  • 3/4c granulated sugar
  • 1/4c packed brown sugar
  • 1c pure pumpkin puree
  • 2 large eggs
  • 1/2c canola oil
  • 1/2 tsp vanilla extract
  • 1/2c Masala Chai (real homemade is best! The recipe I like is linked below)

Instructions

  1. Prepare Chai using the recipe linked below or your own favorite. Set it aside and let it steep & cool.
  2. Preheat oven to 350 and lightly grease a 9 inch loaf pan, set aside.
  3. In a medium mixing bowl, combine the dry ingredients (flour, baking soda, salt, pumpkin pie spice, nutmeg, cardamom). Set aside.
  4. In a large mixing bowl or stand mixer, add the granulated sugar, brown sugar, and pumpkin. Mix until well combined. Then add the eggs one at a time, mixing until combined. Add oil and vanilla extract and mix thoroughly.
  5. Add the dry ingredients into the wet ingredients 1 cup at a time, mixing until just combined. Once combined, pour in strained, cooled Masala Chai and mix until combined.
  6. Pour mixture into your prepared loaf pan and bake at 350 for 45-55 minutes or until a toothpick comes out clean. Let cool on a cooling rack for 10 minutes before removing from the pan.
