healthy, immune-supporting cookies

I am LOVING this recipe, you guys.

ok, ok… I know I say that every time… but this one is SO GOOD! 8 ingredients. not ONE of them is sugar! (as long as you don’t count the dark chocolate chips. or the optional sucanat topping. 😉). Rich & moist, yet actually healthy???? I must be dreaming. This recipe might require a trip to your nearest Whole Foods if you don’t already have these ingredients on hand, but man is it worth it. Bananas, coconut, & chocolate. What’s not to love?!

Let’s make a pros & cons list for whether or not you should make these.
Pros:

  1. Easy to follow recipe (aka your kid can help!)

  2. Zero added sugar

  3. BLW & toddler friendly

  4. nut free! (coconuts aren’t actually nuts 😉)

Cons:

  1. they disappear fast

  2. almost too delicious???

  3. uhhh…..

  4. that’s it.

To make these yourself, you’ll need half an hour and:

  • 2 ripe bananas

  • 1 egg

  • 1 drop young living thieves vitality

  • 1 cup old-fashioned rolled oats

  • 1/4 cup coconut manna (Get it here)

  • 1/3 cup unsweetened shredded coconut

  • 1/3 cup young living einkorn flour

  • 1/4-1/3 cup dark chocolate chips (I like Enjoy Life’s Mini Dark Morsels!)

  • optional: organic sucanat for sprinkling on top

Directions:

  • preheat oven to 350 & grease a cookie sheet or a mini muffin pan (yep— you can use either)

  • in a medium sized glass or ceramic bowl, completely mash the bananas

  • stir in the egg & 1 drop of thieves vitality

  • add the rest of the ingredients & stir until well combined

  • using a cookie scoop or 1 tbsp measuring spoon, scoop mixture into the greased pan

  • if using sucanat, pinch a bit onto each cookie before putting in the oven

  • bake for 12-14 mins or until a toothpick comes out clean

  • store in an airtight container on the counter for 3 days or in the fridge for 5

  • ENJOY
