galentine’s day cherry mini muffins

if you follow me on instagram, you may have seen my post from february 13th (galentine’s day) about the delicious mini muffins i made for my toddler! i adapted the recipe from the sesame street kid’s cookbook titled Let’s Cook! by Susan McQuillan, RD to include young living’s einkhorn flour & cinnamon bark vitality oil. they turned out SO WELL.

galentine’s day cherry mini muffins

makes 48 mini muffins

ingredients:

1 cup old-fashioned oats
1/4 cup cornmeal
1 cup plain greek yogurt
1 large egg
1/3 cup olive or vegetable oil
1/2 cup firmly packed brown sugar
cinnamon bark vitality oil & a toothpick
1 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup einkhorn flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup finely chopped dried cherries

instructions:

  1. preheat the oven to 325 & lightly oil a mini muffin pan

  2. in a large bowl, combine the oats, cornmeal, yogurt, oil, brown sugar, & vanilla extract until well mixed.

  3. here comes the fun part: take a toothpick & stick it inside the dropper of your cinnamon bark vitality oil then swirl it through the batter until it’s nice & cinnamon-y enough for you. (try not to eat it all). then mix in the egg & set aside.

  4. in a medium bowl, whisk together the all purpose flour, einkhorn flour, baking powder, baking soda, & salt until well mixed.

  5. pour into the oat mixture & stir gently until just combined- you don’t want to overmix einkhorn flour!

  6. fold in the cherries & begin scooping roughly 1 tbsp of batter into the prepared muffin cups. (i like to use a cookie scoop)

  7. bake for 12-15 minutes, depending on your oven. insert a toothpick into the center of a muffin to test doneness. if the toothpick comes out clean, you’re good to go! allow them to cool for 10 minutes before you remove them from the pan & start baking the next batch.
