Setting Goals: 2021

So if you don’t this about me yet, let me tell you now: I love freezer cooking. In fact, I’m obsessed with it! Every time I make a meal or buy an ingredient, I’m already on google searching for the best way to freeze it. I’ve tried Freezer Cooking as a lifestyle in every tiny renter’s freezer/fridge combo we’ve ever lived in… Yeah, it never went so well. For some reason it wasn’t until, uhm, very recently that I realized if I wanted to really do the Freezer Cooking thing, I’d need an actual freezer. Who knew!

Let’s get to the good part of this post because I am very excited to share this with you! I have decided that 2021 is my year to dive deep into the Freezer lifestyle. I’ve already betrothed myself to a freezer model & bought some much-needed supplies (i.e. multiple styles of reusable freezer containers, freezer tape & labels, and some better lids for my mason jars). This is so exciting!!!!! Think of the possibilities!!!! Any other freezer meal nerds out there?!?

There are SO many things I love making from scratch, but don’t always feel like making from scratch. I’m lookin’ at you, pizza crust. I’m more the type to go with the flow and follow my whims. If I’m baking rolls -which I do every week now because my toddler literally inhales them- I can only make 16 because that’s what we can eat in a week. (if you’re wondering about the math breakdown there, Jason and I eat 2 each as burger buns every Burger Monday & Po eats the rest plain, usually within the first two days. I’m not even joking. Girl INHALES them. 😂🙌🏻) But with a freezer, I can make a big batch and have the option to skip bun-making one week if I want! And I can prep complete freezer meals for those days when I’m either too busy or just really don’t want to cook. On those days we usually cave and get takeout even though we always regret it. (In fact, as I am writing this Jason is out getting Taco Bell because I somehow forgot today when I was doing my meal plan for this week. Whoops.) But this system will all but eliminate those kinds of trips! I’ll be able to buy high quality meat in bulk which will save us both money and time. If I’d had a freezer meal all prepped and ready to be tossed in the oven or crockpot today, I honestly can’t say we’d be eating Taco Bell tonight. I tend to prefer my Taco Bell at 1a.m. after a night spent drunk dancing with friends, not so much on a Tuesday evening.

Once I start this thing, I feel like I’ll be more inspired to try new recipes! Because honestly the thing I love most about cooking after a long day is how I can shut my brain off while I’m doing it. But if I’m making something new, I have to pay attention and refer to the recipe over and over to make sure I’ve got the measurements & cook time right. Plus, I don’t even know if it’s going to taste good! It toootally takes me out of the zone. But with a freezer stocked full, I can opt out of cooking any time I’d like. Ok, I know I’ve said that like 1000 times already and it’s possible I am slightly too excited about this new venture, but hey! I’m gonna let myself unashamedly enjoy things!
